Sausage Manicotti Recipe

Make this Sausage Manicotti for your next  family celebration.  With a simple salad and garlic toast you'll have a  meal to remember.

Blended cottage cheese can be substituted for the ricotta cheese. Whipped cream cheese makes incorporating the cheese together much easier. Mozzarella cheese is best when shredded from a block, but if you are short on time feel free to use pre-shredded cheese.

Step 1: Cook manicotti pasta shells just under al dente. Step 2: In a small skillet, brown 1 lb of Italian Sausage over medium heat.  Add  a jar of store-bought marinara. Step 3: Simmer on low heat for approximately 10 minutes. Remove from heat and set aside.

Step 4: In a large skillet, wilt 5.5 ounces of baby spinach (about 5 cups).  Move spinach around with tongs continuously until all the spinach is wilted.

Step 5: To make the filling, add ricotta cheese, whipped cream cheese, Parmesan cheese, salt, pepper, Italian seasoning, egg, and the wilted spinach to a small bowl and mix until  the ingredients are incorporated.

Step 6: To a piping bag add the cheese mixture (don't over fill the pastry bag).  Fill each cooked manicotti shell with the filling.

Step 7: Layer the sausage mixture, manicotti stuffed shells and cheese.  Bake at 350 degrees covered for 30 minutes.
