Ingredients

Andouille Sausage Pasta Diced Tomatoes Cajun Seasoning Blend Onion Red Bell Pepper Heavy Whipping Cream Parmesan Cheese Garlic Red Pepper Flakes

Step 1:   In a large skillet saute andouille sausage over medium-high heat and sear on both sides. Remove sausage from skillet and set aside.

Step 2:  To the same pan add the onions, peppers, 2 tbsp Cajun spice blend and garlic. Cook for 3 - 5 mins until the vegetables begin to soften.

Step 3:  Cover and bring to a boil. Step 4: Burn the heat down and let the pasta simmer for 12 - 15 minutes.

Step 5: Once the pasta is tender (I prefer pasta just past al dente), return the sausage to the pan.

Step 6:  Add the heavy whipping cream and Parmesan cheese. Simmer over low-heat until the sauce begins to thicken.

Step 7:  Top with fresh parsley and red pepper flakes if you wish. Serve immediately.

Substitutions: You can also substitute with kielbasa sausage or spicy Italian sausage.
