CURRIED EGG SALAD

This twist on egg salad is full of flavor and makes a great low carb lunch or dinner.

What you will need:

Taco Seasoning

Hard Boiled Eggs Hard Boiled Egg Whites Mayonnaise Avocado Curry Cilantro  Chopped Pepper Salt Onion Diced Celery Diced

In a large bowl, mash avocado. Stir in mayonnaise, curry, salt and pepper. Combine until smooth. Add onion, celery, and diced hard boiled eggs and hard boiled egg whites.

Step 1

Next, add in chopped cilantro and refrigerate for 30 minutes before serving. Serve on your favorite bread, with crackers or over sliced tomatoes.
