Sausage Corn Chowder is made in one pot with Italian sausage, fresh or frozen corn, onion, potatoes and cream cheese.

Let's make it!

- In a large stock pot or Dutch oven brown  Italian sausage. Drain any excess grease. – Add red bell pepper, onion, garlic, parsley, thyme, cayenne pepper, and paprika, salt and pepper.  -Saute until the vegetables begin to soften  about 3 - 4 minutes on medium high heat.

Add 3 cups chicken broth and 8 ounces of cubed cream cheese.  Bring to a boil.

– Add potatoes and corn. – Simmer for 20 - 30 minutes until the potatoes are fork tender. – Transfer 2 - 3 cups of the soup to a blender.  Blend until mixture is the consistency of cream corn.

Garnish each serving with green onions.
