These Sugar Cookies with Sprinkles are homemade cookies with much more than sprinkles. They have oats, coconut, Rice Krispies, pecans and sprinkles. You are going to love the texture of these fun sprinkle cookies.
Preheat oven to 350°F. In a large bowl or the bowl of a stand mixer, beat the butter with the white sugar and brown sugar until light and fluffy. Add in one large egg, vegetable oil and vanilla.
1 cup Butter, 1 cup Sugar, 1 cup Brown Sugar, 1 cup Vegetable Oil, 1 Egg, 1 teaspoon Vanilla
Mix in the dry ingredients including flour, cream of tartar, baking soda, and salt.
½ teaspoon Salt, 1 teaspoon Cream of Tartar, 3 ½ cup Flour, 1 teaspoon Bake Soda
Mix in the rice Krispies, oatmeal, chopped pecans, coconut and sprinkles.
1 cup Rice Krispies, 1 cup Oatmeal (not instant), 1 cup Coconut, 1 cup Chopped Pecans, ¼ cup Sprinkles
Drop cookie dough balls onto a baking sheet or cookie sheet that is lined with parchment paper. For a softer cookie bake cookies for 12 minutes or 15 minutes for a crispier cookie. Wait about 1 minute before transferring to a wire rack.
Notes
Use a cookie scoop to ensure the cookies are uniform in size. At Christmas time I like to make small cookies, but for other occasions I use a ice cream scoop and make large cookies.
Change up the sprinkles for different holidays or occasions.
Be sure to scrape the sides of the bowl during each step of the directions.
Use either an electric mixer or a stand mixer with the paddle attachment for the best results.
Start with room temperature butter.
For a chewy cookie that is soft in the middle bake for 12 minutes.
For a crispier cookie bake for 12-15 minutes depending upon your oven. Watch them closely!
