Jalapeno Pineapple Salsa

Jalapeno Pineapple Salsa is full of fresh pineapple, red onion, cucumber, red bell pepper, cilantro, fresh lime juice and a hint of jalapeno. All the fresh flavors of summer!

  • In a large mixing bowl, combine all ingredients.
    2 cup Fresh Pineapple, ¼ cup Red Bell Pepper, ½ cup Red Onion, ¾ cup Cucumber, 1 Tbsp Jalapeno Diced fine, Juice from one lime, 2-3 Tbsp Cilantro, ½ tsp Salt
  • Allow flavors to blend at room temperature for 30 minutes, then chill until time to serve.
  • Serve with pita or tortilla chips.

Notes

  • Did you know you can purchase pineapple spears all peeled and sliced? You'll still need to dice them, but it's a nice shortcut.
  • Two cups of diced pineapple equal about one-half of a whole pineapple.
  • Select a ripe pineapple for the best flavor. Look for one that has a slightly soft exterior and a fragrant aroma. Avoid pineapples that are overly green or have brown spots.
  • I prefer a chunky salsa texture, for this recipe, but if you want a smoother salsa, you can pulse the ingredients in a food processor or blender.
  • Pineapple pairs well with a variety of ingredients. Consider including diced tomatoes, black beans or avocado in the salsa.
  • Let the salsa sit for at least 30 minutes before serving.
