  • 1 c Butter
  • 1 c Sugar
  • 1 c Brown Sugar
  • 1 c Vegetable Oil
  • 1 Egg
  • 1 tsp Vanilla
  • ½ tsp Salt
  • 1 tsp Cream of Tartar
  • 1 tsp Bake Soda
  • 3 ½ c Flour
  • 1 c Rice Krispies
  • 1 c Oatmeal (not instant)
  • 1 c Coconut
  • 1 c Chopped Walnuts
  • ¼ c Sprinkles

  • Preheat oven to 350°F. In a large bowl or the bowl of a stand mixer, beat the butter with the white sugar and brown sugar until light and fluffy. Add in one large egg, vegetable oil and vanilla.
  • Mix in the dry ingredients including flour, baking powder, baking soda, and salt.
  • Mix in the rice Krispies, oatmeal, chopped walnuts, coconut and sprinkles.
  • Drop cookie dough balls onto a baking sheet or cookie sheet that is lined with parchment paper. For a softer cookie bake cookies for 12 minutes or 15 minutes for a crispier cookie. Wait about 1 minute before transferring to a wire rack.

  • Use a cookie scoop to ensure the cookies are uniform in size. At Christmas time I like to make small cookies, but for other occasions I use a ice cream scoop and make large cookies.
  • Change up the sprinkles for different holidays or occasions.
  • Be sure to scrape the sides of the bowl during each step of the directions.
  • Use either an electric mixer or a stand mixer with the paddle attachment for the best results.
  • Start with room temperature butter.
  • For a chewy cookie that is soft in the middle bake for 12 minutes.
  • For a crispier cookie bake for 12-15 minutes depending upon your oven. Watch them closely!
