Spicy Roasted Chickpeas

You are going to love how easy this crunchy snack comes together. Eat them by the handful or add these crunchy bites to your favorite salad recipe.

  • Preheat oven to 400 degrees.
  • Drain and rinse chickpeas thoroughly. Once rinsed, place them on a paper towel and pat dry. This is a crucial step that should not be missed. Rinsing and drying gives them that extra crunch.
  • Combine chickpeas and 2 tbsp Olive Oil, 2 tsp Chili Powder, ½ tsp Onion Powder, ½ tsp Garlic Powder, ¼ tsp Cayenne Pepper, ½ tsp Salt and ½ tsp Pepper in a small bowl. 
  • Cover your favorite baking pan with parchment paper (oil if you prefer) and evenly spread out the chickpeas. You want to ensure they have evenly spread apart, so they all cook the same.
  • Once your oven has reached 400 degrees Fahrenheit, place the pan into the oven for 30 minutes.
  • After 30 minutes, turn your oven off but leave the chickpeas inside. As the oven cools, they will further dehydrate giving your chickpeas the perfect crunch.

Notes

Store roasted chickpeas in an airtight container and they are best if used within 2 days.
