– 2 lb Chicken Breast – 1/4 cup Taco Seasoning – 1 tsp Chili Powder – 1 tsp Cumin – 1 tsp Garlic Powder – 1 cup Salsa – 4 oz Cream Cheese – Green Onions and Cilantro Garnish

STEP 1: Place the chicken breasts into the slow cooker or crock pot in a single layer. You can add a layer of olive oil to the slow cooker to keep the chicken from sticking to the pan.

STEP 2: Sprinkle the taco seasoning, chili powder, garlic powder, and cumin evenly over each breast. STEP 3: Pour salsa over the top of the chicken breasts and cook on high for 3 hours or low for 6 hours.

STEP 4: Remove chicken and shred on a cutting board with two forks. STEP 5: Mix in diced room temperature cream cheese into the salsa mixture. Return the lid to the pot and let sit for approx 15 - 20 minutes while the cheese melts.

STEP 6: Return all ingredients and mix until all of the chicken is coated. STEP 7: Garnish with cilantro and green onions.

– Keep dinner low-carb by making a burrito bowl. Top with avocado, a Mexican cheese blend, additional cilantro and pico de gallo. – Create a nacho platter with all your favorite toppings. A small amount of jalapenos is a great addition.
