Sausage Breakfast Burritos

Sausage Breakfast Burritos are a delightful breakfast for any day of the week and so quick and easy to make. They are full of scrambled eggs, breakfast sausage, onions, peppers, salsa, and your favorite kind of cheese.

Ingredients

  • ½ pound Breakfast Sausage
  • 6 Eggs
  • 1 teaspoon Hot Sauce
  • ½ cup Sliced Onion Optional
  • ½ cup Sliced Green or Red Bell Pepper Optional
  • ½ teaspoon Salt
  • ½ teaspoon Pepper
  • 4 10" Flour Tortillas
  • ½ cup Grated Colby Jack Cheese
  • ½ cup Salsa

Instructions

  • Add sausage to a skillet and cook until browned, making sure to crumble the sausage as it cooks; remove from skillet and set aside.
  • Add onions and peppers to the same skillet. Saute until tender. Remove from pan and set aside.
  • Add eggs to the skillet and cook, whisking, until they just begin to set. Season with salt and pepper, to taste. Continue cooking until thickened and no visible liquid egg remains, about 3-5 minutes; set aside.
  • Lay out four flour tortillas. Layer each with ¼ of the scrambled eggs, sausage and onion and peppers. Continue with 2 tablespoon salsa, and 2 tablespoons of cheese.
  • Fold in opposite sides of each tortilla, then roll up, burrito-style.
  • Service immediately.

Notes

FREEZER OPTION: Wrap cooled egg wrap in foil or plastic wrap and freeze in a freezer container. To use, thaw in refrigerator overnight. Remove foil; wrap tortilla in a moist paper towel. Microwave on high until heated through, 30-60 seconds. Serve immediately.
