SIMPLE INGREDIENTS
- Butter - Unsalted butter is preferred. You can omit the salt in the recipe if you use salted butter. I also always use butter that is room temperature.
- Brown Sugar
- Granulated Sugar
- 1 Egg
- Vanilla
- Salt
- All-Purpose Flour
- Baking Soda
- Cream of Tartar
- Cinnamon
- Powdered Sugar
- Vanilla
- Milk
HOW TO MAKE CHEWY CINNAMON COOKIES
STEP 1: Preheat oven to 350ºF. In a small bowl, mix white sugar and cinnamon and set aside.
STEP 2: In a large mixing bowl or the bowl of a stand mixer, add butter and sugar and beat until creamy. This should take approx. 4 minutes on medium speed.
STEP 3: Beat in the egg and vanilla extract.
STEP 4: Mix the dry ingredients with the wet ingredients. (Flour, Cream of Tartar, Salt, and Baking Soda)
STEP 5: Shape the dough into 1" balls and roll through the cinnamon-sugar mixture. Place cookie dough balls on a cookie sheet lined with parchment.
STEP 6: Bake time will be between 10-12 minutes. The lighter in color the chewier the cookie. While the cookies cool, make the icing.
STEP 7: Mix powdered sugar, vanilla, and milk. Add milk until you get the desired consistency. Drizzle icing over the cookies.
WHAT CREATES A CHEWY COOKIE
Cream of tartar prevents the sugar in the cookie dough from crystalizing, keeping the dough soft and creating a chewy, delicious cookie.
TIPS FOR MAKING CHEWY CINNAMON COOKIES
- Cool cookies before icing. It's hard to wait, but adding the icing too early will cause the icing to melt into the cookie instead of sitting on top as a pretty drizzle.
- The butter should be softened. Leave butter on the counter to soften. You can cut the butter into small squares and spread it out on a plate to make softening quicker. I recommend using unsalted butter for this recipe.
- Bake until they are light brown. Do not over bake.
- Be sure to cream the butter well. Most people rush this step, but you should not it's important to create a light airy cookie. This will take about four minutes with either an electric mixer or a stand mixer.

For best results store in an airtight container. To keep the cookies fresh, freeze until ready to serve. Add the icing after they have thawed.
