How to make soft sugar cookies

STEP 1: Preheat oven to 350°F. In a large bowl or the bowl of a stand mixer, beat the butter with the white sugar and brown sugar until light and fluffy. Add in one large egg, vegetable oil and vanilla. Use the paddle attachment if using a stand mixer.

STEP 2: Mix in the dry ingredients including flour, cream of tartar, baking soda, and salt to the wet ingredients.

STEP 3: Mix in the Rice Krispies, oatmeal, chopped pecans, coconut and sprinkles.

STEP 4: Place dough balls onto a baking sheet or cookie sheet lined with parchment paper. For a softer cookie bake cookies, bake for 12 minutes or 15 minutes for a crispier cookie.

Step 5: Let the cookies cool for a couple of minutes before transferring to a wire rack.

Tips for making chewy sugar cookies

  1. Use a cookie scoop to ensure the cookies are uniform in size. At Christmas time I like to make small cookies, but for other occasions I use a ice cream scoop and make large cookies.
  2. Change up the sprinkles for different holidays or occasions. Green sprinkles for St. Patrick's Day, red hearts for Valentine's day...
  3. Be sure to scrape the sides of the bowl during each step of the directions.
  4. Use either an electric mixer or a stand mixer with the paddle attachment for the best results.
  5. Start with room temperature butter.
  6. For a soft chewy cookie in the middle, bake for 12 minutes.
  7. For a crispier cookie, bake for 12-15 minutes, depending upon your oven. Watch them closely!
