Granola Bites

These little muffin granola bites are filled with all the good stuff. Almonds, Craisins, honey, peanut butter and yes M&M's!

Ingredients

  • 14 ounces Sweetened Condensed Milk
  • 1/3 cup Peanut Butter
  • 1 teaspoon Vanilla
  • 1/2 teaspoon Salt
  • 1 Tablespoon Honey
  • 3 1/2 cup Quick-Cooking Oats
  • 1 cup Almonds
  • 1/2 cup Craisens
  • 1/2 cup M&M's

Instructions

  • Start by preheating your oven to 350°F. Lightly spray a mini muffin pan with cooking spray to ensure easy removal of the bites.
  • In a large mixing bowl, stir together the sweetened condensed milk, peanut butter, vanilla, salt, and honey until smooth and well combined.

  • Mix in the quick-cooking oats and almonds, stirring until all the ingredients are evenly distributed and coated with the wet mixture. Gently fold in the Craisins and M&M's, making sure they’re evenly dispersed throughout the batter.
    3 1/2 cup Quick-Cooking Oats, 1 cup Almonds, 1/2 cup Craisens, 1/2 cup M&M's
  • Using a cookie scoop, divide the batter evenly into the prepared mini muffin pan, filling each cup to the top.
  • Place the muffin pan in the preheated oven and bake for 15-20 minutes, or until the edges of the bites are just beginning to brown. Once baked, remove the pan from the oven and allow the bites to cool in the pan for about 5 minutes. Transfer them to a cooling rack to cool completely before serving.

Notes

I know I said most ingredients are flexible, but you are limited in the kind of oats you choose. Quick Cooking and Old Fashioned are interchangeable, but don't use Instant or Steel Cut Oats. Instant will give your Easy Granola Bites a mealy texture and the batter may not hold together as well. Steel Cut Oats are less processed and take quite a bit longer to cook. Delicious for breakfast, but not what you are looking for in Granola Bites!
