Equipment

Ingredients

  • 2 pounds Ground Pork
  • 1/4 cup BBQ Seasoning
  • 1/4 cup Water
  • 16 Tortillas Corn or Flour
  • 1 Onion Diced
  • 1 bunch Cilantro Chopped
  • 1/2 cup BBQ Sauce
  • 1/2 cup Ranch Dressing
  • 1/2 cup Queso Fresco

Instructions

  • In a large skillet over medium heat, cook the ground pork until browned and fully cooked, breaking it up into crumbles with a spoon. Drain any excess fat from the skillet.
    2 pounds Ground Pork
  • Add the BBQ seasoning and water to the cooked pork. Stir well to combine, and let it simmer for about 5 minutes, allowing the flavors to meld together. Remove from heat and set aside.
1/4 cup BBQ Seasoning, 1/4 cup Water
  • For Corn Tortillas: Heat a dry skillet over medium-high heat. Place each tortilla in the skillet for about 30 seconds on each side until warmed and slightly charred or place over an open flame for just a few seconds per side. Wrap the heated tortillas in a clean towel to keep warm.
For Flour Tortillas: Wrap the tortillas in a damp paper towel and microwave for about 30 seconds to 1 minute until warmed. Alternatively, you can heat them in a dry skillet as you would with corn tortillas.
    16 Tortillas
  • In a small bowl, mix the BBQ sauce and the ranch dressing until well combined.
1/2 cup BBQ Sauce, 1/2 cup Ranch Dressing
  • Place a generous spoonful of the BBQ-seasoned pork onto each tortilla. Drizzle each taco with about 1 tablespoon of sauce.
  • Top with diced onion, cheese, and chopped cilantro. Serve immediately.
1 Onion, 1 bunch Cilantro, 1/2 cup Queso Fresco

Notes

  • Optional Toppings: Add a squeeze of lime juice, avocado, or pickled jalapeños for extra flavor.
  • Make Ahead: The BBQ pork mixture can be made ahead of time and reheated before serving.
