Honey Bourbon Meatballs

Ingredients

Meatballs

  • 1 pound Ground Chicken
  • 1 Egg
  • 1/3 cup Bread Crumbs
  • 1/4 cup Onion Diced
  • 1 1/2 teaspoon BBQ Spice
  • 2 cloves Garlic Minced
  • 1/2 teaspoon Salt
  • 1/2 teaspoon Black Pepper

Sauce

  • 1 tablespoon Brown Sugar
  • 1 tablespoon Apple Cider Vinegar
  • 1/4 cup Ketchup
  • 1/4 cup Honey
  • 1/4 cup Bourbon
  • 1/2 teaspoon Corn Starch
  • 1 cloves Garlic Minced
  • 1/2 tablespoon Dijon Mustard

Instructions

Meatballs

  • Preheat oven to 400 degrees. In a large bowl, combine ground chicken, egg, bread crumbs, onion, BBQ spice, garlic, salt and black pepper.
    1 pound Ground Chicken, 1 Egg, 1/3 cup Bread Crumbs, 1/4 cup Onion, 1 1/2 teaspoon BBQ Spice, 2 cloves Garlic, 1/2 teaspoon Salt, 1/2 teaspoon Black Pepper
  • Spray a cookie sheet with cooking spray or use parchment paper to keep the meatballs from sticking. Roll the mixture into small meatballs and place on the baking sheet.
  • Roll the mixture into 15 - 20 meatballs (depending on size) and place on a baking sheet. Bake for 15-20 minutes turning once halfway through.
  • While the meatballs are cooking, prepare the sauce.

Sauce

  • Add brown sugar, apple cider vinegar, honey, ketchup, bourbon, cornstarch, garlic, and Dijon mustard to a saucepan. Bring mixture to a boil over medium heat. Turn the heat down and simmer for 15-20 minutes.

  • Removed meatballs from the oven and toss them in the BBQ sauce. Return the meatballs to the oven for an additional 5 minutes.
  • Serve extra sauce as a dipping sauce with the meatballs.

Notes

    • If you are looking for a fast way to make cocktail meatballs consider using bags of meatballs instead of making homemade.
    • Make larger size meatballs if you prefer.
    • Double or triple the recipe for a big crowd.
    • The sauce should coat the back of a spoon and continue thickening as it cools.
