These meatballs are quick and easy to make and full of flavor. They make the perfect finger food or light weeknight dinner.

Instructions
Lightly spray baking pan with oil. Preheat oven to 350 degrees.
In a food processor grind tortilla chips.
Dice jalapeno, cilantro and red bell pepper.
In a mixing bowl, add ground chicken and all of the other ingredients.
Using your hands, mix well.
Measure 1/4 c of mixture, then divide in two so that each meatball is approximately 1/8 of a cup. Roll and place on baking sheet.
Bake for 15 - 2o minutes. Serve immediately.
Notes
Add 1/4 - 1/2 tsp of cayenne pepper if you like a little more heat.
