Heat the butter in a small skillet over medium heat. Add the onions and sauté for 5 minutes or until they begin to soften.

Reduce the heat to medium low and cook for 15 - 20 minutes, stirring often, or until the onions are very soft, golden brown. The timing will depend on the size of your onions and the heat of your stove.
While onions are cooking, preheat oven to 350 degrees.
In medium bowl, whisk eggs, evaporated milk, thyme, salt and pepper; set aside.

To the bottom of the deep dish pie crust layer bacon, onions and grated cheese.
1 Deep Dish Pie Crust, 3/4 cup Crumbled Bacon, 1 cup Sharp Cheddar Cheese
Pour egg mixture into pie pan. Gently give the ingredients a stir with a fork.
Bake 40 to 50 minutes or until knife inserted in center comes out clean. Let stand 5 minutes; cut into wedges.
