Caramelized Onion and Bacon Quiche is made with eggs, bacon, white cheddar cheese, evaporated milk, and thyme, all baked in a deep dish pie crust.

Quiche is one of my absolute favorite recipes to make. It’s so warm and cozy, and everyone in my family loves it. It’s the creamy texture that gets me every time.

This quiche can easily be customized and it’s so easy to serve because you can make it ahead. I’ve gifted this quiche to friends and family so many times over the years.

Onion and Bacon Quiche Ingredients

Ingredients to make caramelized onion and bacon quiche.
  • Onion – My preference would be white onion or yellow onion over red onion.
  • Butter – Salted or unsalted butter.
  • Eggs
  • Evaporated Milk – Heavy cream or milk can be used as a substitute.
  • Thyme – Dried thyme or fresh thyme leaves can be used.
  • Salt and Black Pepper
  • Deep Dish Pie Crust – For this classic quiche, use a pie crust found in the refrigerated section at the grocery store and bake the quiche in your own pie dish. You can also find premade pie crust in the frozen section.
  • Crumbled Bacon – You’ll need about five pieces of cooked crispy bacon. See directions below on how to cook bacon in the oven.
  • Sharp White Cheddar Cheese – Gruyere is a good substitute as it pairs well with salty bacon like in many Quiche Lorraine recipes.

How to make caramelized onion and bacon quiche

Step 1: Heat the butter in a large skillet over medium-high heat. Add the onions and sauté for 5 minutes or until they begin to soften.

Step 2: Reduce the heat to medium low and cook for 15 – 20 minutes, stirring often, or until the onions are very soft and golden brown. The timing will depend on the size of your onions and the heat of your stove.

Step 3: While the onions are cooking, preheat the oven to 350 degrees.

Step 4: In a medium bowl, whisk eggs, evaporated milk, thyme, salt, and pepper; set aside.

Step 5: To the bottom of the deep dish pie crust, layer bacon, the sweet caramelized onion mixture and grated cheese.

Step 6: Pour egg mixture into pie dough. Gently give the ingredients a stir with a fork.

Step 7: Bake for 40 to 50 minutes or until a knife inserted into the center comes out clean. Let stand for 5 minutes before cutting into wedges.

Caramelized onion and bacon quiche variations

Some great options to change the flavor without changing the creamy texture are:

  • Ham
  • Colby Jack, Goat, Feta, or Gruyere cheese.
  • 1/2 cup fresh or frozen spinach
  • 2-3 Large button mushrooms sliced.
  • Crab Meat
  • Red Bell Pepper
  • Asparagus or Broccoli
  • Cream cheese or sour cream
  • Create an all vegetable quiche by adding all your favorite vegetables and leaving out any protein like pork, beef or chicken.

There are no hard and fast rules when making quiche. Use ingredients that you have on hand and that appeal to your family.

What to serve with onion and bacon quiche

Fresh Fruit Salad: Serve this dish for Sunday brunch with a light and refreshing fruit salad that will complement the quiche’s richness with natural sweetness.

Potato: Breakfast potatoes are a great compliment to any of quiche you serve.

Avocado ToastCreamy avocado on toast is an excellent addition to breakfast.

Yogurt with Berries: A small bowl of yogurt topped with fresh berries or a drizzle of honey adds a creamy and tangy element to your breakfast spread.

Coffee or Juice: Offer coffee, tea, or fresh fruit juice to complete the meal.

What kind of pie crust should I use

Refrigerated Pie Crust – You’ll find this crust at your local grocery store in the refrigerated section. I love this option, as you can roll out the dough and bake in your own pie pan.

Frozen Pie Crust – I’ll use a frozen pie crust if I plan to gift the quiche. This way, no pie pan has to be returned.

Homemade Pie Crust – There is something special about a buttery pie crust. Try this Flaky Vodka Pie Crust.

No crust: Make this a crustless quiche by adding all of the ingredients to a greased pie pan. Basically follow the recipe instruction, but do not use a pie crust. It may cook a little bit quicker, so be sure to check the quiche at 30 minutes. You’ll know it is done when the internal temperature reaches 160 degrees.

How to cook crispy bacon in the oven

  • Place the bacon onto a baking sheet with parchment paper in a single layer.
  • Bake at 400 degrees for 15-18 minutes or until it’s as crispy as you like. Place cooked bacon on paper towels to drain any excess grease.

Bacon onion and cheese quiche recipe tips

  1. To be sure you have enough room in the pie crust for the egg mixture, use a deep dish pie plate, not a tart pan. It should be a 9-inch pie plate.
  2. Be sure to use a baking sheet to protect the oven in case the egg mixture creeps out of the pie crust.
  3. You’ll know the quiche is done when the internal temperature is 160 degrees on an instant-read thermometer.
  4. Be patient when cooking the onion. It’s best to slice them thin and cook over low heat to get a deep brown color without burning.

Can I make this caramelized onion quiche ahead of time?

Yes, you can make this quiche ahead of time. Here’s how:

Prep all of the ingredients. Store the bacon, cheese and onion in individual airtight containers or zip top bags. Store in the fridge until ready to assemble.

Add the egg, evaporated milk, salt, pepper and thyme to a medium bowl. Mix until the eggs are beaten. Store the egg mixture in the fridge with plastic wrap over the top or in an airtight container. When you are ready to bake, layer the cheese, bacon and onions into the pie crust and pour the mixture over the top.

Bake at 350 degrees for 40 – 50 minutes. See recipe card for all of the ingredient measurements.

How to store bacon and onion quiche

Fridge: Store leftover quiche in an airtight container for up to 4 days. Be sure it has cooled to room temperature before storing it in the fridge.

Freezer: Cut the quiche into single serving pieces and store in an airtight container for up to 6 months. If you want to store a whole quiche, wrap it in plastic wrap and store it in a resealable freezer bag.

Make ahead and freezer for later:

  1. Add all of the quiche ingredients to a large resealable freezer bag.
  2. Seal with all of the air removed.
  3. Place the bag inside of a frozen pie crust (if you have one) and put both into an additional resealable freezer bag. The quiche will be good in the freezer for up to 6 months.
