In a skillet, add diced red bell pepper. Saute for 3-5 minutes until they begin to soften.
⅓ cup Diced Red Bell Pepper
Add chicken, bacon, ranch dressing, half and half, salt, pepper and cheese. Mix until all ingredients are incorporated and the cheese begins to melt.
2 cup Diced Cooked Chicken, ⅓ cup Cooked Bacon Crumbles, ½ cup Ranch Dressing, 1 cup Half and Half, 1 cup Jalapeno Cheddar Cheese, ¼ teaspoon Pepper, ⅛ teaspoon Salt
Add hot pasta to skillet and mix until all pasta is coated with the sauce.
Sprinkle with green onion and serve immediately.
2 Tablespoonn Diced Green Onion
Notes
If you plan to serve the pasta immediately, do not rinse the pasta.
If you plan to serve the pasta later in a casserole dish, you will want to cook it just under al dente and rinse it to stop the cooking process.
You can use whichever cheese you like best, but I like the jalapeno cheddar. It's not too spicy and gives the pasta a distinct flavor. I'm kind of obsessed with this cheese flavor. It's so good with crackers, too!
I used bottled ranch salad dressing. You could make a homemade ranch for the recipe, but don't use the dry mix directly with the pasta.
