Hearty Hamburger Soup

When the temperature drops, this is number one on the list of requests at my house. Hearty ground beef and hearty vegetables in an herb tomato broth make this a simple family favorite recipe.

Equipment

Ingredients
  

  • 1 1/2 pound Ground Beef
  • 1 Diced Onion
  • 2 cans Green Beans
  • 2 cup Diced Celery
  • 2 cup Carrots
  • 2 cans Corn I use shoe peg corn
  • 1 cup Peas
  • 2 cans Petite Diced Tomatoes
  • 2 cans Tomato Sauce
  • 3 cup Beef Broth
  • 2 Tablespoon Tomato Paste
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Onion Powder
  • 1 Tablespoon Italian Seasoning
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 1/2 teaspoon Red Pepper Flakes
  • 2 Bay Leaves

Instructions
 

  • Brown ground beef with diced onion. Drain any excessive fat.
    1 1/2 pound Ground Beef, 1 Diced Onion
  • Add all ingredients to the pot with ground beef.
    2 cans Green Beans, 2 cup Diced Celery, 2 cup Carrots, 2 cans Corn, 1 cup Peas, 2 cans Petite Diced Tomatoes, 2 cans Tomato Sauce, 3 cup Beef Broth, 1 teaspoon Garlic Powder, 1 teaspoon Onion Powder, 1 Tablespoon Italian Seasoning, 1 teaspoon Salt, 1 teaspoon Black Pepper, 1/2 teaspoon Red Pepper Flakes, 2 Bay Leaves, 2 Tablespoon Tomato Paste
  • Bring to a boil.
  • Reduce heat and simmer until vegetables are cooked to your preference, approximately 1 hour. Remove bay leaves before serving.

Crock Pot Instructions

  • Brown ground beef and drain. Add all ingredients to a 6 - 8 quart crock pot. Cook on low for 8 - 9 hours or high for 4 - 5 hours. Remove bay leaves before serving.

Notes

  • I use canned green beans and corn, but frozen will work as well.  Add or substitute your favorite vegetables to make this perfect for your family.
  • If you feel this is going to be too much soup for your family, cut the measurements in half, and you will have enough for 6 servings.

Soup storage

Store leftovers properly: If you have any leftovers, store them after they have cooled in an airtight container in the fridge for up to 4 days.
Freezer: Cool leftover soup to room temperature before storing it in an airtight container, and it will be good in the freezer for up to 3 months.
Reheat: Leftovers can be reheated in the microwave or on the stovetop. Add additional broth or water if the soup isn't soupy enough.
