Honey Lime Berry Fruit Salad

Fresh berries, watermelon, and pineapple tossed in a honey lime dressing with fresh mint. A simple summer fruit salad that's perfect for gatherings.

Ingredients

  • 1 dry pint blueberries
  • 1 6-ounce container blackberries
  • cups strawberries sliced
  • cups watermelon cubed
  • 1 heaping cup pineapple cubed
  • cup honey
  • Zest of 1 lime
  • 1-2 tablespoon fresh lime juice
  • ½ tablespoon fresh mint finely chopped
  • mint for garnish

Instructions

  • Add the blueberries, blackberries, strawberries, watermelon, and pineapple to a large serving bowl.
    1 dry pint blueberries, 1 6-ounce container blackberries, 1½ cups strawberries, 1½ cups watermelon, 1 heaping cup pineapple
  • In a small bowl, whisk together the honey, lime zest, lime juice, and chopped mint.
    ⅛ cup honey, Zest of 1 lime, 1-2 tablespoon fresh lime juice, ½ tablespoon fresh mint
  • Pour the dressing over the fruit and gently toss to combine.
  • Garnish with fresh mint leaves.

  • Serve immediately or refrigerate until ready to serve.

Notes

Storage

This fruit salad is best enjoyed the same day it's made.
The leftovers still taste great the next day, but the watermelon releases quite a bit of juice as it sits. If you're making this for a cookout or gathering, I'd plan to make only what you think you'll need.
