Why I Made the Recipe

I love a good dip—they’re perfect for all types of entertaining. Dips are always a crowd-pleaser, and they’re usually the easiest recipes to throw together. I often go for something simple like this chive dip with chips and veggies, or if I want to really wow people, this spinach sausage dip never fails to impress.

Honestly, I didn’t even know what pimento cheese was until a few years ago. I ordered it during happy hour at a local restaurant, and after one bite, I was completely hooked. I loved it so much, I came home and created my own version. Now it’s one of my favorite dips to serve!

Recipe Notes

  • Mayonnaise – I do not recommend Miracle Whip for this recipe (but then again, I never recommend it:)
  • Cheese matters – Sharp cheddar gives the best flavor, but you can also try a mix of sharp and mild if you want something more mellow.
  • Pimentos – You’ll find these in the olive section at your grocery store.
  • Fresh Jalapeno – What I like best about using jalapeno is the crunch, which you would not get with canned jalapenos.
  • Extra creamy? Add an additional tablespoon or two of mayonnaise for a softer spread.
  • Make it spreadable: Let it sit at room temperature for 10–15 minutes before serving if you want an easier spread for sandwiches or sliders.

You can find a complete list of the ingredients and their measurements in the recipe card below.

Step 2: Add the cheddar cheese, pimentos, and jalapeños to the cream cheese mixture.

Step 3: I think it’s best to let the dip chill for 30 minutes to let the flavors meld. Serve with your favorite crackers, veggies or on a sandwich.

There are so many ways!! Here are a few of my favorites:

  • Spread on sliders or burgers for an instant flavor boost
  • Get fancy and serve them as tea sandwiches with my fancy cucumber sandwiches.
  • Inside a grilled cheese or warm sandwich (trust me on this one!)
  • As a filling for deviled eggs
  • Paired with my olive dip for a fun party platter.
