Roasted Cabbage with Bacon is the side dish that surprises everyone at the table. Thick cabbage steaks are brushed with olive oil, sprinkled with seasoned salt and pepper, topped with crispy bacon, and roasted at 400°F for just 25 minutes.
The edges turn golden. The center remains tender with a slight bite. And suddenly, cabbage is not boring anymore.

Growing up, cabbage usually meant simmered on the stove for a long time. Perfectly fine, but not exactly exciting.
The first time I roasted it instead of boiling it, everything changed. The edges caramelized, the layers stayed structured, and it actually felt hearty on the plate.

Ingredients
- Head of green cabbage, cut into ½ inch steaks
- 1 tablespoon olive oil
- Seasoned salt
- Black pepper
- Bacon, crumbled
- Green onions for garnish
Recipe Notes
Cabbage: Keep the core intact when slicing. It helps the layers hold together.
Seasoned salt: Do not exceed ½ teaspoon total, or it can overpower the cabbage.
Bacon: Cook it before adding for a crisp texture. Raw bacon will soften the cabbage more and increase roasting time.
How to Make Roasted Cabbage with Bacon
Step 1: Preheat oven to 400°F.

Step 2: Cut cabbage into ½-inch-thick steaks. Place them on a greased baking sheet.



Step 3: Lightly brush olive oil over the top of each cabbage steak.
Step 4: Sprinkle seasoned salt and pepper evenly over all steaks.
Step 5: Top each piece with about 1 tablespoon of cooked, crumbled bacon.
Step 6: Bake for 25 minutes or until:
- Edges are golden brown
- Bacon is crisp
- A fork slides easily into the center, but the cabbage still holds its shape
Step 7: Garnish with green onions and serve immediately.

Variations
- Add thin white onion slices before roasting.
- Sprinkle Parmesan during the last 5 minutes.
- Drizzle lightly with balsamic glaze after baking.
- Add a pinch of red pepper flakes for heat.

Storage and Reheating
Refrigerator: Store in an airtight container up to 3 days.
Reheat: Warm in a 375°F oven for 8 to 10 minutes to bring back some crispness. The microwave works, but it softens the edges.
Freezer: Not recommended. The texture changes too much.

Roasted Cabbage with Bacon
Ingredients
- 1 head Cabbage cut into 1/2" steaks
- 1 Tablespoon Olive Oil Use more as needed.
- 1/4 teaspoon Seasoned Salt
- 1/4 teaspoon Pepper
- 5 slices Cooked Crumbled Bacon About 1 tbsp per steak
- Green Onions for Garnish
Instructions
- Preheat oven to 400 degrees.
- Cut cabbage into 1/2" steaks and place on a greased cookie sheet. See picture above.1 head Cabbage
- Using a basting brush, add olive oil to the top of each cabbage steak.1 Tablespoon Olive Oil
- Sprinkle 1/4 tsp seasoned salt and 1/4 tsp pepper onto steaks. Only 1/4 of each for all six steaks.1/4 teaspoon Seasoned Salt, 1/4 teaspoon Pepper
- Add 1 tbsp crumbled bacon to the top of each steak.5 slices Cooked Crumbled Bacon
- Bake for 25 minutes.
- Garnish with green onions. Serve immediately.Green Onions for Garnish
Notes
- Slice evenly at ½ inch thick. Thinner slices will fall apart.
- Roast on the middle rack for best browning.
- Use parchment paper for easier cleanup.
- If you like more color, broil for 1 to 2 minutes at the end, watching carefully.
