Layer the Havarti and cheddar cheeses on top of the pepper jelly, add bacon slices, then place the other slice of bread on top of the cheese, butter side out.
Heat a nonstick skillet over medium-low heat.
Place the sandwich in the pan, cover, and cook for 2 to 3 minutes, or until the bottom slice of bread is golden brown.
Flip the sandwich, replace the lid, and cook until the other slice of bread is golden brown. Should take 1 - 2 minutes. It's best to cook slowly to allow the cheese to melt.
