As late summer rolls in, my garden is overflowing with tomatoes just begging to be used. This recipe was born from the bounty of those vibrant, juicy tomatoes. While I love making this dish year-round—it’s especially stunning at Christmas—it’s absolutely perfect when you want to highlight the flavor of homegrown tomatoes.

I’m a big fan of bruschetta and goat cheese, and this recipe brings them together in the best way. By whipping the goat cheese with a touch of heavy cream or half and half, you create a rich, creamy base that’s simply irresistible.   • Goat Cheese – I find the best deal at Cosco.
  • Tomatoes – During the summer, I’ll use whatever is available from the garden, but in the winter months, I use Roma tomatoes.
  • Garlic
  • Olive Oil
  • Fresh Basil leaves
  • Balsamic Glaze – You can make your own, or I often purchase it at a local oil store. Trader Joe’s has a very affordable option.

Feta Cheese vs. Goat Cheese

While I opted for goat cheese in this recipe, feta would be a delicious alternative. Here’s a quick comparison of their distinct flavor profiles:

  • Goat Cheese: Known for its tangy and slightly tart flavor, goat cheese offers a creamy, smooth texture that becomes more robust as it ages. Its rich and velvety consistency makes it a perfect choice for spreads and dips.
  • Feta Cheese: Feta, on the other hand, brings a briny, salty punch with a crumbly texture. Typically made from sheep’s milk or a combination of sheep and goat’s milk, it adds a bold, savory element to any dish.

How to make Bruschetta Dip

Step 1: Combine the goat cheese and heavy whipping cream in a food processor. Process until smooth and creamy, scraping down the sides as needed. Transfer the whipped goat cheese to a serving plate, spreading it out evenly.

Step 2: In a medium bowl, combine the diced tomatoes, chopped garlic, black pepper, and salt. Add the chopped basil, olive oil, and balsamic vinegar to the tomato mixture. Gently stir to combine all the ingredients well.

Step 3: Spoon the tomato basil mixture over the whipped goat cheese, spreading it out evenly.

Step 4: Drizzle balsamic glaze over the top of the tomato mixture for an extra burst of flavor.
