  • Tortillas – Use 8″ flour tortillas to make these breakfast tortilla pizzas.  You can also use a smaller tortilla if you want to make a mini breakfast pizza, but the egg may take over the pizza. 
  • Pizza Sauce – Use pizza, marinara or tomato sauce to make these breakfast tortillas.
  • Bacon – Use cooked and crumbled bacon, turkey pepperonis, or your favorite breakfast meat.
  • Optional: Green onion and red pepper flakes or a touch of hot sauce.

How to make breakfast tortilla pizza

Step 1: Preheat oven to 375 degrees.

Step 2: Place a tortilla on a baking sheet. It’s a good idea to either oil the pan or use parchment paper to keep the tortilla from sticking.

Spread tomato sauce (you can use pizza sauce, tomato sauce or marinara sauce) and half of the mozzarella cheese onto each tortilla. Crack an egg in the center of each tortilla and sprinkle crumbled bacon. Add salt and black pepper to the egg.

Step 3: Bake for 12-15 minutes until the egg whites are set and the egg yolks are to your liking.

Step 4: Garnish with green onions and red pepper flakes. Serve immediately.

  • Be sure to take the sauce to the edge of the tortilla. This will help the tortilla from getting over cooked.

This pizza comes out perfect when you add the egg right to the top of the pizza before cooking. I love a sunny side up egg on my breakfast pizza!

You can use scrambled eggs, but you’ll want to be sure they are not cooked all the way through or they will dry out and be kind of rubbery.
