This Cheesy Bacon Dip is the appetizer everyone asks me to bring. It’s loaded with crispy bacon, two kinds of cheese, and creamy mayonnaise, then baked until hot and bubbly inside a crusty sourdough bread bowl.

I’ve been making this recipe for years, and it has become my signature dish whenever we’re invited to a party. Every year our friends host a bacon-themed party where everyone brings a bacon recipe, and this is the one I show up with.

People don’t just ask for the recipe anymore. They ask if I’m bringing the bacon dip before they ask if I’m coming.

  • Bake the dip on a sheet pan in case the bread bowl leaks or the cheese bubbles over.
  • Save the bread pieces you pull from the center of the loaf. Cut them into chunks and serve them with the dip.
  • You’ll need more dippers than just the bread from the bowl, so set out crackers, baguette slices, tortilla chips, or vegetables.
  • For a little kick, stir in 1 to 2 teaspoons of hot sauce or ¼ teaspoon red pepper flakes.
  • If you’re short on time, microwave the filled bread bowl without the lid for about 5 minutes, then cover with the bread lid and bake until hot all the way through.

What If I Don’t Have a Bread Bowl?

No bread bowl? No problem. Spoon the dip into a small baking dish and bake uncovered at 350°F for about 30 minutes, or until the dip is hot and bubbly.

It won’t have quite the same presentation, but it still tastes amazing. Serve it with crackers, baguette slices, tortilla chips, or fresh vegetables.

HOW TO MAKE CHEESY BACON DIP

  • Preheat oven to 350 degrees.
  • To a large bowl add, 1 pound cooked crumbled bacon, 1 small diced onion, 1 tsp garlic, 1 cup mayonnaise, 1 cup cheddar cheese and 1 cup monterey jack cheese.

  • Mix all the ingredients to combine and set aside.

  • Cut off the top of the bread, keeping in mind that you will use this as a lid when cooking the dip.
  • Hollow out the center of the bread to make room for the dip.
  • Pour the cheesy mixture into the bread bowl, cover with the lid and bake for 1 hour.

Ingredients
  

  • 1 pound cooked bacon crumbled
  • 1 small onion diced
  • 1 teaspoon garlic minced
  • 1 cup mayonnaise
  • 1 cup shredded Monterey Jack cheese
  • 1 cup shredded cheddar cheese
  • 1 8- inch bread bowl
  • Optional garnish: sliced green onions or chives

Instructions
 

  • Preheat oven to 350°F.
  • In a large bowl, combine the cooked crumbled bacon, diced onion, minced garlic, mayonnaise, Monterey Jack cheese, and cheddar cheese. Stir until well combined.

  • Cut the top off the bread bowl and set it aside to use as a lid.
  • Hollow out the center of the bread bowl, leaving enough bread around the sides and bottom to hold the dip. Cut the removed bread into pieces for serving.

  • Spoon the bacon cheese mixture into the bread bowl and place the bread lid on top.
  • Place the bread bowl on a baking sheet and bake for 45 – 60 minutes, or until the dip is hot and bubbly in the center.
  • Remove from the oven, garnish with green onions or chives if desired, and serve warm with bread pieces, crackers, chips, or vegetables.
    Optional garnish: sliced green onions or chives

Notes

Store leftover dip in an airtight container for up to 3 days.  Leftover dip would be great served over a baked potato!

Make the Bacon in the Oven

I love to cook bacon in the oven. It makes it so much easier than the stove top and you don’t get burned with grease!

Here are the simple steps to making bacon in the oven:

  • Preheat the oven to 400 degrees.
  • Line a baking sheet completely with foil. I use two pieces so that the foil runs up the sides of the pan. This will make clean up much easier.
  • Lay out the bacon on the cookie sheet.
  • Bake for 18 – 20 minutes. You may need to turn the pan half way through the cooking time, depending on how your oven bakes.
  • Remove the bacon from the oven and place the cooked bacon on a plate lined with paper towels to catch the bacon grease.
