Birthday Cake Blondies

Rich and chewy, these Birthday Cake Blondies are the perfect way to celebrate just about anything!

I took my famous chocolate chip cookie recipe and added white chocolate chips and super cute sprinkles. They are excellent on their own, or you can take them to the next level with a big scoop of ice cream.

If you’re looking for a change of pace from your typical chocolate brownies, these blondies are for you. They’re rich and creamy, made with brown sugar, butter, and vanilla. Feel free to add other add-ins like pecans, walnuts, or a layer of buttercream icing. No special occasion is required!

What are blondies?

Blondies are dessert bars, like brownies, made with brown sugar and vanilla but without cocoa. They are called blondies due to their golden brown color. Blondies are similar in texture to brownies in that they are rich and buttery.  

Blondies can be considered a blank slate, but you can add chocolate chips, frosting, or whatever else you like. I’ve added birthday sprinkles to make them fun and festive.

They are just fun – Dessert squares are always fun to eat, especially with colored sprinkles. 

Change of pace – Everyone loves a good chocolate brownie, but changing things up is always nice. 

Quick and easy – These blondies taste similar to a cookie, but you can save so much time making them in bar form.

Blondie cake ingredients

Sprinkles, butter, white sugar, brown sugar, baking powder, flour, milk, eggs, salt, brown sugar and white chocolate chips.
  • Butter – Salted or unsalted butter both work to make these blondies.
  • Brown Sugar – Brown sugar gives these blondies a caramel-like sweetness. Light or dark brown sugar both work. 
  • White Sugar
  • Eggs – I tend to have large eggs in the fridge, but you can use any size. 
  • Vanilla – Use real vanilla extract for the best vanilla flavor.
  • Milk – Whatever type of milk you have in the fridge is fine.
  • All-Purpose Flour – I used white, unbleached flour.
  • Salt
  • Baking Soda
  • White Chocolate Chips
  • Sprinkles – Use any sprinkles you have on hand.

How to make a brownie birthday cake

Step 1: Preheat oven to 350 degrees and line a 9 x 9-inch pan with parchment paper. I use some sort of clip to hold the parchment paper in place and remove them after the batter is ready for the oven.

Step 2: Beat softened butter, brown sugar, and granulated sugar with a stand or hand mixer until combined. Add the wet ingredients: eggs, vanilla extract, and milk.

Step 3: Whisk together flour, salt, and baking soda in a separate large bowl. Gradually stir dry ingredients into the wet until completely combined.

Step 4: Fold in white chocolate chips and sprinkles. Spread evenly into the prepared square baking pan. Sprinkle additional sprinkles over the top of the batter.

Step 5: Add the batter to the baking pan and spread evenly. If you wish, add extra sprinkles to the top.

Step 6: Bake in a preheated oven for 25-30 minutes or until a toothpick inserted in the center comes out clean. Cool completely on a wire rack before serving.

Variations

  • Add some chocolate chips; any kind will work, whether you use semi-sweet, dark, or milk chocolate.
  • Cover with your favorite frosting, store-bought or homemade.
  • Stir in a touch of almond extract for more sweetness and a nutty flavor.
  • Crumble your favorite cookie and stir into the batter for some chunkiness and added flavor. Golden Oreos would work well. 
  • In addition to mixing them into the batter, sprinkle the tops of the blondies with white chocolate chips. 

Tips

  • Take the butter and eggs out of the fridge before preparing the blondies. Softened butter and room-temperature eggs are easier to work with.
  • Use rainbow sprinkles to add some color to the blondies.
  • Be careful not to overbake or you’ll get dry blondies, you want them to be like the texture of a fudgy brownie.

How to store birthday blondies

Leftover birthday blondies can be stored in an airtight container at room temperature for up to 3 days.

Alternatively, you can freeze leftovers for up to 3 months. Thaw on the kitchen counter before serving.

    2 1/2 cup Flour, 1/2 teaspoon Salt, 1 teaspoon Baking Soda
  • Fold in white chocolate chips and sprinkles. Spread evenly into the prepared baking pan. Sprinkle additional sprinkles over the top of the batter.
    1 cup White Chocolate Chips, 2 Tablespoon Sprinkles
  • Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean. Cool completely before serving.
