Avocado Toast may well be the easiest recipe I ever post, but it’s definitely my latest favorite breakfast, especially with a sunny-side-up egg. This recipe can be made in less than 5 minutes with just 6 ingredients.
It Must Be Ripe
I love avocados. I am so jealous of people in California, who can literally go out to a tree in their backyard and pick what they need. Here in the Midwest, you have to think ahead to be sure you can get one perfectly ripe. At my house, I buy at least two weekly and then work my schedule around them.

For Breakfast?
I honestly hadn’t ever thought about avocado for breakfast, but then I started seeing avocado toast all over the internet and on menus at many local restaurants. Well, why wouldn’t it be good for breakfast?
One day, I had all 5 ingredients I thought would be required and decided to give it a try. I mashed the avocado together with lemon juice, salt and pepper and then slathered it on top of a piece of toast. I wanted a little more protein so I added a sunny-side-up egg to the top.
How to make Avocado Toast
- Remove the pit from the avocado and discard. Scoop out the avocado into a bowl and mash it with a fork. Add a squeeze of fresh lemon juice, season with salt and pepper to taste.
- Toast the bread until it is golden brown.
- Slather the avocado mixture over the bread.
- Eat immediately.

Now I know what the buzz is all about! It is incredible. I promise this is not a recipe for breakfast alone. I love this recipe for a quick afternoon snack or it pairs up beautifully with a glass of red wine for a light dinner.

What goes good with Avocado Toast
My favorite is a sunny-side-up egg, but often I’ll serve this toast with just fresh fruit. I serve strawberries, blueberries and blackberries with most every breakfast, but use whatever fruit you have available.
Removing the pit from the avocado
Cut the avocado vertically. Twist to separate the halves. Tap the knife onto the pit and twist slightly. The pit should release easily at this point. Use a spoon to loosen the flesh from the peel and scoop into a bowl.
So good – I like to leave the avocado a little chunky on the toast. Great breakfast!
